Cacio e Pepe is a traditional Roman main course, famous all over the world.
The history of this dish, symbol of Roman times, was born in the pastures during transhumance. At the time, the shepherds of the Roman countryside made long movements of the flock, during the journey they filled the saddlebag with caloric and long-life foods. In the saddlebags there were always dried tomatoes and bacon, but in the middle there was also space for pecorino, black pepper in grains and dried spaghetti prepared by hand with water, salt and flour.

Itinerary
Check in and introduction
During the Live Virtual Tour Cooking Class I'll lead you step by step in the preparation of fresh hand rolled spaghetti and a delicious Cacio and Pepe sauce
We will start by checking the ingredients and tools in order to be sure you have everything you need.
First of all we will prepare the dough for spaghetti and we will leave it settle for a wile, we will procede crushing the black pepper and starting the sauce using a medium frypan and than we will roll spaghetti one by one becoming confident with the dough. In the meantime water will boil with spaghetti we will end the preparation of the sauce to season our pasta,
and your spaghetti Cacio e Pepe will be ready sooner than expected!
